Mediterranean Meatballs

Ingredients:

  • 1 Tbsp Mediterranean Rub
  • 4 cloves Garlic, minced
  • 4 Tbsp Cilantro
  • 1 small Yellow Onion, minced
  • 3 Eggs
  • 2 tsp sea salt (Roasted Garlic or Rosemary)
  • 2 lbs Ground Pork, Beef, or Chicken
  • 1 1/4 cups Panko Bread Crumbs

Instructions:

  1. Preheat oven to 375 degrees F.
  2. Add the rub, garlic, cilantro, onion, eggs, and salt to a food processor and puree.
  3. In a large bowl, combine puree and meat. Fold in Panko gently.
  4. Make into meatballs and place on a lined sheet pan. Bake for 10-15 minutes, turning every 5 minutes.
  5. Serve with Greek Party Dip or Red Pepper Pesto (see recipe card).
